Houmous & Vegetable Flat Bread
Ingredients
1 Red onion
3 Courgettes
1 Red pepper
8 Sundried tomatoes
1 Cup of pitted green olives
1 Bunch of fresh mint
4 Pitta breads
1 Jar of Al’Fez Houmous
1 tbsp olive oil
200g Feta cheese
1 Fresh lemon
Method
Preheat oven to 200 degrees. Slice the onion, courgettes, pepper, sundried tomatoes, olives and mint. Slice pitta breads in half and place in oven to 2 minutes. Take pitta bases from the oven and spread Houmous evenly on each round. Toss the courgette, onion and pepper in olive oil and salt, then place on pittas. Add the sundried tomato, olives, mint and crumbles of feta. Bake in the oven for 15 minutes. Drizzle with lemon and serve warm or at room temperature.
Serving Suggestion: Serve with mixed green salad.
