Al’Fez Apricot and Coriander Beef Pie
500g Mince beef
4 Baking potatoes
2 Garlic cloves
2 Celery sticks
4 tsp cumin
2 tbsp olive oil
1 Knob of butter
Salt and freshly ground pepper to season
Grated cheese for topping
Peel potatoes and cut into small pieces. Boil in salted water until tender, drain and leave in pan with lid until steam dry. Preheat oven to 180 degrees (fan assisted). Chop onion, carrot, celery and mushrooms. Heat oil over a medium heat in large pan and fry mince until brown. Add chopped vegetables and fry for 3 minutes. Pour over Al’Fez Apricot and Coriander sauce and simmer for 20 minutes. Mash potatoes with butter and season. Place mince and vegetables into an over proof dish and top with mash potato. Sprinkle with grated cheese and cook in oven until brown.
Serving Suggestion: Serve with Al’Fez Couscous and salad.
