Apricot and Coriander sizzling Prawns with Couscous

Serves: 4

Apricot Prawns

Ingredients

200g Pecooked king size prawns

1 Al’Fez Couscous

1 Jar of Al’Fez Apricot & Coriander

1 tbsp olive oil

1 tbsp butter

2 Garlic cloves

1 tsp ground cumin

1 tsp fresh ginger

1 tsp cayenne pepper

1 tsp paprika

1 Lemon

Bunch of fresh coriander

Method

Heat the olive oil and butter in the pan, when the butter begins to sizzle, add crushed garlic and cook for 30 seconds. Add cumin, ginger, paprika, cayenne pepper, cook briefly, then add prawns and cook for further 3 minutes. Add the Apricot and Coriander jar of sauce and cook over a medium heat for 8 minutes. Cook couscous as instructed on the pack. Serve prawns and sauce over a bed of couscous and garnish with lemon and coriander.

 

Serving suggestion: Serve with warm bread and salad.
