Chicken Honey & Almond Vegetable Tagine
2 Large chicken breast
1 Large onion
2 Garlic cloves
2 Fresh red chillies
1 Green pepper
1 Red pepper
Fresh coriander for garnish
Salt & freshly ground pepper for seasoning
Slice carrots and cauliflower, boil until soft and drain. Dice chicken and brown in oil. Add sliced onions, chillies, garlic, peppers, mushrooms and fry until brown. Add boiled carrots and cauliflower to pan and pour over Al’Fez Honey and Almond Tagine sauce, season, cover and simmer for 20 minutes.
Serving Suggestion: Serve with Al’Fez couscous, warm bread and garnish with fresh coriander.
Another great idea ….. Substitute prawns for chicken for a seafood alternative……
