Al'Fez Recipes
Moroccan Apricot and Coriander Vegetable Tagine.
Ingredients
1 Jar Al’Fez Apricot & Coriander Sauce
350ml vegetable stock
2 carrots
2 potatoes
1 courgette
½ red pepper
½ green pepper
½ can chickpeas
100g peas
Fresh coriander
Method
1. Cut all vegetables into medium size pieces, place in a large, oiled pan and sauté for 5 minutes. Add Al’Fez Apricot & Coriander Tagine Sauce and vegetable stock. Season with salt and pepper.
2. Bring to the boil, cover and simmer on a low heat until vegetables are cooked through. Garnish with chopped coriander and serve with couscous or rice.
