Couscous with Prawns

1 pack Al'Fez Moroccan Spiced Couscous
1 large onion, finely chopped
2 garlic cloves, finely chopped
300g courgette, sliced
350g cooked prawns
200g sweet pea
400g cooked or canned chickpeas
400g can of chopped tomatoes
1 tbsp ground ginger
1 tsp cinnamon
1 tsp ground coriander
1 tsp ground cumin
salt and pepper to taste
olive oil for frying
1.5 cup vegetable stock
1. Heat up the olive in a pan. Add the onion and cook until it softens. Add the garlic and spices, cook for 1 minute.
2. Add the courgette and cook for 5 minutes. Add the tomatoes and the prawns, stir well, cover with a lid and cook for 5 minutes, stirring occasionally.
3. Add the sweet peas and chickpeas, and cook for another 5 minutes, with stirring. Season with salt and pepper to taste.
4. Place the couscous in a bowl and pour on the vegetable stock. Cover with a plate and leave for 5 minutes. Serve the prawns with vegetables on the couscous. Garnish with freshly chopped coriander or mint.
