Courgette, Chicken & Pine Nut Couscous
Ingredients

1 pack Al'Fez Pearl couscous
Small bunch of coriander
4 medium courgettes
2 tbs pine nuts , toasted
2 tbsp Al'fez Harissa
2 oranges
500g Cooked chicken
Natural yogurt
Olive oil
White wine vinegar
Method
1. Cook the couscous as per instructions on packet
2. Chop the coriander, slice the courgettes and shred the chicken into bite size pieces
3. Zest and juice the oranges, make a dressing with olive oil and white wine vinegar
4. Gently fry the courgettes in olive oil until brown and soft
5. Mix the couscous, courgette, pine nuts and coriander (leave some for garnishing) in your serving bowl.
6. Add the harissa to the dressing and mix into couscous. Finally add the chicken and garnish with the remaining coriander
7. Serve with a bowl of natural yoghurt
